Melting Snowmen Cookies
I can’t take credit for the adorable creation that is the melting snowmen and women sugar cookies. I first saw these on Pintrest almost a decade ago. But I will tell you this, while I have the skill to create intricate bakery level sugar cookies with custom designs, around the holidays, I just don’t have the time.
In addition to being a busy Realtor, my mom owns Taljh Gift Baskets, and December is our busiest month. So the time of the year the rest of the world is pulling out their most complicated recipes and craft ideas is when I am looking for something quick and easy. These cookies are it! I also love that they are winter-themed A.K.A. non-denominational.
Sugar Cookie Recipe
Confession time, homemade sugar cookies are amazing but in the interest of saving time, I used a tub of Pillsbury sugar cookie dough. If you want to make your own dough, here is an amazing recipe from my friend Terry Nelson- Petrie.
Cream the butter and sugar by mixing
6 tbs butter of softened butter
1/2 cup sugar
Mix together
Creamed sugar butter
1/2 tsp vanilla vanilla
1 egg
Slowly add 1 and 1/2 cups of the flour
Wrap it, put it in the fridge for 1-2 hours.
*This yields a small batch so you may want to double it.
Icing Recipe
I do make my own icing, which is fast and easy. This is a different sugar cookie icing than I use to decorate other cookies. For designs I want a stiff icing, this is a bit runnier which works perfectly for the melted look.
Mix the following together. To make it thicker add more sugar.
2 and 1/2 cups powdered sugar
1 teaspoon vanilla extract (clear)
3 tablespoons water
Decorating
Bake large round sugar cookies and let cool
Mix white icing
Using a spoon (or piping bag for more control) spread the white icing on the cookie
Add a large marshmallow in the back corner (do this while the icing is still liquid)
Decorate the snowmen. I used piping gel with some food coloring and pipped the face and buttons. I have seen this done with both regular and mini M&Ms, nonpareils, chocolate chips, sprinkles, oreo pieces. Get creative and have fun!
